CHIMICHURRI PORK RIB SAUCE WITH FRIED ORGANIC POTATOES

INGREDIENTS

  • 1 shallot, finely chopped

  • 1 red jalapeño (or chilli), seeds removed and finely chopped

  • 2 garlic cloves, finely chopped

  • ½ cup red wine vinegar

  • 1 tsp salt

  • ½ cup coriander, finely chopped

  • ¼ cup flat leaf parsley, finely chopped

  • 2 Tbsp, oregano, finely chopped

  • ¾ cup extra-virgin olive oil

METHOD

  1. In a small bowl combine the shallots, jalapeño, garlic, vinegar, and 1 tsp. salt. Let sit 10 minutes before adding the coriander, parsley, and oregano. Once combined, whisk in oil and serve immediately. This sauce also makes a great marinade for red meats.
