INGREDIENTS
4 tbs unsalted butter
2 cups cocoa powder
2 cups sweet potato puree
2 1/4 cups granulated sugar
3 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups flour
3/4 tsp baking powder
3/4 tsp salt
3 cups chocolate chips
A handful of walnuts, crushed
METHOD
Heat oven to 175 degrees celsius. Grease an 8inch pan and line with baking paper. Grease top.
In a medium saucepan over a low heat, melt butter. Remove pan from heat and stir in the cocoa powder. Set aside and let cool slightly.
Add the sweet potato puree, sugar, egg and vanilla to the cocoa butter and mix.
In a small bowl combine the flour, baking powder and salt. Pour the dry ingredients into the wet ingredients and stir until no trace of the flour remains. Fold in chocolate chips and the walnuts and pour into your prepared pan. Lightly smooth over the top with a spoon so the mixture sits evenly in the tray.
Place in the oven and bake until the surface appears dry (about 15 to 20 mins). Cool for 20 minutes before cutting.
